Bill the Butcher in Edmonds: 'We Have a Clear Clean Light'

Long-idle store plans to open in early December.

Following up on a story Edmonds Patch published on Friday, a spokeswoman for Bill the Butcher says the store will open in Edmonds before the end of the year.

"Finally we have a clear green light for Edmonds," said Terri Ann Johnson, social media, events and community coordinator for Bill the Butcher. "Our construction crew is ready to start the final work to prep our Edmonds location to become our next Bill the Butcher shop."

Added CEO J'Amy Owens: "I wish thank all the patient and persistent people who have continued to write letters and make the trek to stop in at our other locations to ask 'When'?! We look forward to welcoming you into our shop with meaty goodness."

The current timeline, said Johnson, would have Bill the Butcher opening its doors in Edmonds in early December. The empty space, at Fourth and Main, has sported the company's logo for two years.

The business sent out a news release last week announcing the settlement of four lawsuits, as well as completion of the restructuring of more than $1.5 million of debt and the securing of $500,000 in capital.

Bill the Butcher opened its first shop, in 2009, in Woodinville. Since then, it has closed locations in Madison Park and Bellevue. Its four remaining locations are Woodinville, Laurelhurst, Redmond and Magnolia. It also has a property in Wallingford and has said in the past that it wants to open one in Kirkland.
